Today I prepare a first course full of taste: tagliolini with salmon, radicchio and rocket! Radicchio is very good this season. We can taste it in many ways: with rice, in pizza .....

- Remove the radicchio leaves.
- Wash and cut into strips.
- Clean and wash the arugula.
- Cut the smoked salmon into small pieces.
- Clean, wash and chop a shallot.
- Put a pot of water.
- Put a little oil in a frying pan.
- Add the chopped shallot and turn on the gas.
- Sauté the shallot and add the radicchio.
- Season with salt and pepper. Stir and reduce heat.
- Cook 15 minutes by adding (if necessary) some water.
- When the radicchio is cooked in a pan put the salmon and let it wither.
- Add the cream and put out the fire,
- When the water boils throw the noodles.
- Cook one minute. Drain pasta.
- Throw it in the pan of sauce.
- Mix well, add chopped arugula.
- Serve the noodles with salmon, radicchio and arugula.
