Strozzapreti, or, at your choice, pasta with clams and chickpeas datterini: first an easy, fast and very healthy. The only difficulty is the preparation of the dough, but you can safely buy ready. As mentioned in other recipes, Strozzapreti are a first typical of the Romagna: this is so common to find them in our tables or restaurant. In this recipe we use clams or clams lupine: I personally prefer the clams lupine, more small, but tasty. The chickpeas are already cooked and the addition of tomatoes datterini gives just the right sweetness to the dish.

- Wash well, several times, the clams under running water.
- Put them in a large bowl covered with cold water by adding a handful of salt. The salt helps the clams to expel any sand contained within.
- Allow them to soak for 3-4 hours.
- prepare Strozzapreti fresh by putting the flour with a pinch of salt. Making the fountain and add the warm water. Form a firm dough that will leave to rest, covered for half an hour.
- Peel l 'garlic.
- Wash and chop the parsley.
- wash datterini tomatoes and cut each into two parts.
- Once the dough has rested, roll it out rather thick (mm 2) with a rolling pin and cut into strips 1 / 2 cm.
- Wipe the strips with the palm of your hand and form Strozzapreti. NB: For the step by step explanation of the preparation of the dough, see recipe of Strozzapreti. Alternatively you can buy fresh pasta already fatta.In this case it will be necessary 350 gr.
- He spent at least 3 hours dall'ammollo, wash again, many times, le clams under running water.
- Place in a large pan (size suffficienti to skip the pasta) some oil. Warm. Add the 'garlic and datterini tomatoes cut. Cook a couple of minutes.
- Add the clams and cover with a lid in order to facilitate the opening of the shellfish.
- When the clams are hatched, add ceci and lemon rind. Aggiuste salt and pepper. (Note: use a little salt, just to flavor the beans. Clams are already very savory)
- Mix well for about a minute and turn off the heat.
- Add the parsley chopped.
- When the water .. for cooking pasta, boils, add salt and dip the Strozzapreti.
- Cook a few minutes, drain and transfer Strozzapreti in the pan with the sauce.
- Turn on the heat and stir.
- Avoid prolonged cooking of the sauce. In this way, the flavor of all the ingredients of the Strozzapreti chickpeas and clams I will be exalted.
